I’ve just come back from spending six months in England, and was amazed that their number one takeaway dish is a chicken tikka. The Brits dish is actually chicken tikka masala, a take on the authentic Indian dish that many claim is different enough to be recognized as a new creation with its origins coming from the Bangladeshi community in Glasgo, Scotland. That’s the politics done, I don’t much care when I’m eating the creamy oven baked chicken with its rich sause, the masala, adding a depth of taste to an already established dish. If you doubt wether such a recipe is authentic then you may be interested to hear that a Glasgow-based company is now exporting the sauces to India! So, that has to make it worth a look.
